Tar dyes were determined quantitatively in ice candies by double-wavelength spectraphotometry. Tar dyes were detected in 80% of colored ice candies, The meanvalue of the concentrations of tar dyes in ice candies was 7.78±6.40ppm. Tartrazine(Y4) was used most extensively and detected in 77% of ice candies which contained tar dyes. Brilliant blue FCF(B1) was detected in 43% of them. The mean value of the concentration of tartrazine was 7.21ppm and that of brilliant blue FCF was 0.76ppm. Ice candies which contained a single dye were 37%. The most ice candies contained plural species of dyes. The ratio of the mixture of dyes was determined by double-wavelength spectrophotometry. When there were many samples which contained a mixture of dyes and their specific absorption peaks different with one other, the double-wavelength spectrophotometric method was very useful.
