[Synopsis] Statistics released by the United States Department of State in December 2003 show that the world production and consumption of coffee beans are 6.4×10^6 tons and 3.7×106 tons, respectively. Fortytwo percent of the harvested coffee beans include irregular or immature beans, and are not effectively utilized, because they are regarded as off-grade, and not shipped to the market. However, these immature beans contain considerable amounts of chlorogenic acid derivatives. The content of total chlorogenic acid derivatives in immature beans (6g/100g) was the same as that of mature beans, but the ratio of CQA/diCQA increased with maturity of coffee cherry. One hundred grams of raw coffee beans of the Robusta breed (Indonesia WIB) were extracted with seventy percent methanol, and seven kinds of chlorogenic acids were isolated by the formation of chlorogenic acid-K-caffeine complexes, gelfiltration using Sephadex LH-20, and preparative HPLC. Seven kinds of isolated chlorogenic acids were identified as 3-, 4-, 5-caffeoylquinic acids, 3-feruloylquinic acid, 3,4-, 3,5-, and 4,5-dicaffeoylquinic acids by FAB-MS, MS/MS analysis and ^1H-NMR spectra. When the contents of chlorogenic acids were evaluated according to the breed and the area of production, they were highest at 10.5g/100g in the Robusta breed produced in Indonesia. These results indicate that the immature coffee beans, are not shipped to the market, can be expected as resources of chlorogenic acids derivatives.
