The electric resistance of the muscles of carp, Cyprinus carpio, and crucian carp, Cyprinus carassius, was measured by a KOHLRAUsH bridge type instrument in the course of deterioration at 17°, 20°, 25° and 30°C. The organoleptic observations and the determination of ATP and free SH group were also carried out. It was observed, as shown in Fig. 2, that the curve of electric resistance lowered stepwise and the curve was distinguishable into six parts in total, in which the steep and the flat parts alternated. From the organoleptic observations and the determination of ATP and free SH group, the author assumed that these six parts indicate successively before rigor, full rigor, after rigor, autolysis, early spoilage, and advanced spoilage stages.
