Strawberries are a high-value fruit with distinctive characteristics, including having a bright red color and juicy texture. The importance of their texture qualities requires the development of non-destructive analytical methods. This study focuses on the use of silicon-based visible–near infrared (Vis-NIR) spectroscopy to predict the texture qualities of strawberries. The highest correlation values (r) of prediction of firmness were 0.81 (transmittance) and 0.78 (reflectance), while those of brittleness were 0.78 (transmittance) and 0.77 (reflectance). It was found that transmittance mode can predict the texture qualities of strawberries better than reflectance mode. Savitzky-Golay filtering improved the prediction accuracy for most characteristics. The results showed that Vis-NIR spectroscopy, combined with partial least square regression analysis and Savitzky-Golay smoothing, can predict the texture qualities of strawberries at moderate to high accuracy. Further studies are needed to reduce the effects of individual sample sizes and improve prediction accuracy.

The effect of freezing, and iced and hot water thawing on the quality of durian pulp was investigated. Mature durian pulp was removed with seeds, vacuum-packed, and frozen at -20°C. Thawing in iced water (~0°C) and hot water (~90°C) was then applied and the quality of the pulp was assessed based on physicochemical properties (pH, moisture content, soluble solids concentration (SSC), color, sugar content (sucrose, glucose, and fructose), and organic acid content (succinic acid and citric acid ), texture and smell profile. Overall, the freezing and thawing conditions, particularly the hot water thawing, posed an effect to the moisture content, color, and smell profile of the durian pulp. A significant increase in the moisture content, as well as a decrease in the color brightness was observed. Furthermore, the hot water-thawing process also induced slight variation to the smell attribute and strength of the entirety of smell. Although the sugar content significantly decreased after freezing and thawing, it was only affected by the freezing process but not by the thawing conditions. No significant variations were noted in the pH, SSC, organic acids and texture of the frozen durian pulp.

Non-thermal atmospheric plasma has emerged as a promising alternative sanitizer because of the presence of highly reactive oxygen species (ROS). This study investigated an integrated bubble-assisted method for more efficient distribution of the reactive species. We aimed to evaluate the antibacterial activity of the plasma-bubbling system against E. coli O157:H7 and determine the presence of reactive species. Two approaches were investigated: direct treatment and plasma-activated water (PAW) generation, using a plasma jet and pure oxygen. E. coli numbers were reduced by 3.3-log within 5 min of PAW treatment, whereas direct treatment achieved a higher log reduction, to below the detection limit, in 3 min. Study of selected scavengers of relevant ROS revealed that hydroxyl radicals (•OH) and singlet oxygen (1O2) are the primary short-lived reactive species. Based on these results, our plasma-bubbling treatment shows promise as an alternative water-based sanitizer.

The possibilities and limitations in the food kansei model (Ikeda et al., 2004) have been revealed through a case of product development for a ready-to-eat cup-soup that had achieved two-billion-yen sales in 1993. Based on the pre-specified product concept, twelve samples were selected to extract twenty descriptors for the sensory evaluation of the product image, and ten descriptors for that of the quality characteristics. All the sensory scores were summarized by principal component analyses (PCA). The quality characteristic evaluation corresponded to the route of perception in the model, and the image evaluation, the route of cognition as well as the interrelation between the two routes. The model can ensure the marketing success of the specified processed foods only if consumer needs can be precisely incorporated into the initial product concept.
