Three-dimensional numerical simulations of the flow dynamics of milk using a volume-of-fluid (VOF) method were carried out in order to optimize the process in which milk is filled into a gable top carton with a volume of 1,000 mL. In the numerical simulations, the shear-thinning property of milk was modeled with the Carreau-Yasuda model. The sensitivity of the milk flow dynamics due to the prescribed lifting motion of the gable top carton and due to the filling speed (the number of milk cartons filled per hour) was investigated. When there was no prescribed lifting motion, it was computationally shown that milk which impinged on the bottom of the carton largely jumped and flowed outside the carton. In other words, it was found that a prescribed lifting motion can significantly reduce the amount of milk that escapes the carton. Also, it was found that the efficiency for filling a milk carton was sensitive to the filling speed. The optimum filling speed determined from fully three-dimensional numerical simulations was found to be consistent with previous investigations that used two-dimensional numerical simulations.

The understanding of non-Newtonian two-phase flows is a far from easy issue because two-phase flows dynamically and intricately behave through boundary interfaces with the local variation in rheological properties. A key factor to explore structures and mechanisms of non-Newtonian two-phase flows is to perceive a local profile of non-Newtonian properties corresponding to the shear-rate. In this article, I review current situation and challenges about the study of non-Newtonian two-phase flows through the author' s studies on the dynamic motion of bubbles and drops in non-Newtonian fluids.

Recently, old narrow tunnels are reused by widening their sections for economic efficiency. New design concept will be required in their construction because excavation damaged zone (EDZ) might be already formed around old tunnels. Especially, estimation of EDZ extent is necessary for safe construction and stability assessment of a widening tunnel. In this study, EDZ around an old tunnel constructed in the Neogene soft rock seventy years ago was estimated based on P-wave velocity and observation of the face during widening. Deformation caused by widening the old tunnel was also measured. It was found that EDZ estimated by reduction in P-wave velocity was in good agreement with that estimated by observation of the face. It was also found that deformation of the widening tunnel was much less than that of either the old tunnel or a new tunnel constructed near the widening tunnel. In the widening tunnel, most of EDZ had been excavated and non-damaged zone outer side of the EDZ had been little excavated. It can be expected that deformation of a widening tunnel is little when the section size of that is almost equal to extent of EDZ.
