The effects of adding gelatinized starches to a kneading dough (a process known as yukone in Japanese) on the crumb grain of baked white breads were studied using magnetic resonance imaging (MRI) and using scanning electron microscopy (SEM) with and without distilled-water soaking of the samples. MRI revealed that pores became larger and rounder in yukone breads compared to control breads using the sponge dough method, while the number of pores decreased in yukone breads. SEM revealed many starch granules on the surface of pore walls in the control breads, whereas the yukone breads contained starch gels cemented between starch granules. Gluten nets were found to be uniform and oriented in the control breads and became thicker and coarser in the yukone breads. Comparing the SEM images of two commercial white breads made by the yukone method, the fine gluten nets under the starch walls were found to be considerably different.

Dipeptidyl peptidase-4 (DPP-4) inhibitors are widely used as antidiabetic drugs. We recently reported that DPP-4 inhibition has beneficial effects on heart failure (HF) mice model. Furthermore, we confirmed that myocardial DPP-4 activity was significantly increased in HF mice compared with non-HF mice. The aim of this study was to investigate the level of myocardial CD26 (DPP-4) expression and its association to clinical parameters in HF patients.Endomyocardial biopsy (EMB) specimens (n = 33) were obtained from HF patients who were admitted to Chiba University Hospital from June 2006 to July 2012. EMB specimens were fixed in formaldehyde and stained with Masson's trichrome staining or with anti-CD26 antibody. Patients were divided into the high CD26 density (CD26-H) or low CD26 density groups (CD26-L). DPP-4 density was compared with blood brain natriuretic peptide (BNP) level and echocardiographic parameters at one year after EMB. Although there were no significant differences in echocardiographic parameters between the CD26-H group and CD26-L group, blood BNP levels were higher in the CD26-H group than in the CD26-L group at one year after EMB. Multivariate regression analysis showed that CD26 density was also an independent determinant of blood BNP levels at one year after EMB.The level of myocardial CD26 expression might be a predictive marker of prognosis in patients with HF.

Ninety-three coral species have been identified at Okinotorishima (Okinotori Island), an isolated table reef located in the center of the Philippine Sea. The species composition of the island is similar to that of other islands in the northwestern Pacific, but the number of species is small in comparison with surrounding islands. The coral fauna at the island is characterized by a unique species composition that is independent of the Ryukyu Islands, mainland Japan, Palau, and the Mariana Islands. No endemic species were found, but the dominant Acropora species (A. aculeus, A. sp. aff. divaricata, and A. globiceps) were morphologically different from corresponding species at the Ryukyu Islands. The relatively low species diversity at the island despite the close proximity to an area of high diversity is explained by its small habitat diversity and isolation from other islands. The island is located in a subtropical gyre and is isolated from major currents. Thus, only coral larvae with a long competency period (as long as 70 days) can settle at the island from surrounding islands. This unique species composition seems to have been maintained for at least the last 7600 years, since the last stage of sea level rise in the post-glacial period (Holocene).
