Fungi (eumycetes) isolated from the body surface of the cigarette beetles, Lasioderma serricorne Fabricius (Coleoptera: Anobiidae), were studied for their effect on food sanitation. The cigarette beetles were captured using a pheromone trap in 30 household kitchens in Tokyo, Saitama and Gunma prefectures from the end of July to the beginning of September, 2000. Each of the 150 captured beetles (5 beetles/house) was individually placed in a sterilization tube, with 1 ml of phosphate buffer. By shaking this tube with a touch mixer, the fungal spores adhering to the body surface of the beetle were separated. This extraction liquid was incubated on agar plates of potato dextrose (PDA), Czapek-Dox and Czapek yeast extract (CYA) at 25℃ and/or 26℃ for 5-7 days. Then, the colony grown on the plate was observed and identified on the basis of morphological characters. Consequently, 17 species of molds and about 5 species of yeasts were isolated from the body surface. Genus Aspergillus (12 isolates, 4 species) and genus Eurotium (8 isolates, 2 species) were predominant, followed by genus Penicillium (6 isolates, 4 species) and genus Arthrinium (5 isolates). Among the isolates of the toxigenic species including Aspergillus ochraceus, A. versicolor and A. fumigatus, ochratoxin A production by A. ochraceus were studied. Consequently, both isolates tested positive for toxin production. Moreover, the body surface of the cigarette beetles captured from the kitchens of 3 houses in Tokyo from the middle of August to the beginning of September 2001 was observed by a scanning electron microscope. Some fungal spores, similar to conidia of genus Aspergillus and genus Penicillium, were seen on the surface of the beetles.

Aspergillus section Nigri によるオクラトキシンの産生性や産生菌の分離頻度,分布に関する日本における報告はなく,Aspergillus section Nigri の詳細な分類に基づく調査研究が必要となった.山梨で行った調査の結果,A. niger チトクロームb 遺伝子に基づくDNA タイプAN-D-5, AN-D-7 の菌は,ほとんどはオクラトキシンを産生しないが一部の株でわずかながら産生が見られた.DNA タイプAN-D-4 のA. carbonarius は,オクラトキシン産生の主要な株で,産生量が多く産生株がほとんどではあるが,一部の株では同じ培養条件で産生が認められなかった.ぶどう園土壌および空中浮遊の菌は,ほとんどが,DNA タイプAN-D-1, AN-D-2 のA. japonicus とAN-D-5, AN-D-7 のA. niger であり,DNA タイプAN-D-4 のA. carbonarius は,土壌分離株129 株中1 株であり分離頻度は非常に低かった.収穫後の管理を適正に行えば,食品への汚染は極めて少ないと考えられる.

Trichothecium roseum causes pink mold rot of muskmelons and tomatoes cultivated in greenhouses, and also produces trichothecin, a 12, 13-epoxytrichothecene. To clarify the pathogenicity and trichothecin production of T. roseum, mycological examination was carried out in 8 greenhouses in Chiba Prefecture. The contamination of muskmelon and tomato fruits with trichothecin was also examined. Trichothecium roseum was isolated from almost all of the moldy or discolored muskmelon and tomato fruits, as well as tomato stem dumped near the greenhouse. The fungus was found in the air of a greenhouse in which many moldy tomato fruits were present, but in none of the soil samples from the greenhouses tested. In an inoculation test, T. roseum isolated from muskmelon and tomato invaded and decayed the flesh of matured muskmelons. Moreover, almost all the isolates of T. roseum tested produced trichothecin on Czapek-Dox broth supplemented with 0.2% corn steep liquor cultured for 21 days at 25°C. Trichothecin was detected in moldy muskmelon and tomato fruits collected in the greenhouses.

1960年代に飼料用落花生粕に発見されたアフラトキシン (AF) はその発がん性や毒性の強さ, また, 汚染食品の広範さなどからマイコトキシン研究の中心となり, 食品などにおける汚染実態, 産生カビの分類・同定などについて, 夥しい報告が蓄積されてきた. この報告では, AF汚染, 中でも落花生とコーンを中心に, 汚染とその産生カビについて近年の研究成果を交え紹介する. また, 近縁化合物で同様に発がん性が知られるステリグマトシスチンについても概説する.
