This study is designed to clarify the changes of composition and enzyme activities of the small intestinal mucosa in fasted rats.Starvation for 3 days caused marked decreases in body weight, DNA and protein of small intestinal mucosa, and the activities of digestive enzymes.After starvation for 3 days, rats were refed with the laboratory chow for 1, 3 and 7 days.1) The body weight of rats recovered in 3 days.2) The recovery of the small intestinal mucosa was very rapid, especially its dry weight and DNA.3) Both sucrase and alkaline phosphatase activities increased markedly, then returned to the control level in 7 days.

市販乾燥ヒジキ(Sareassum fusiforme(Harvey)Setchell)に含まれるヒ素は,調理前処理として乾燥ヒジキを水に浸し一定時間水戻しすると溶出されてくる.浸漬水の液温を0℃,15℃,30℃,45℃,60℃,75℃,90℃とし,各々浸漬時間を20分,40分,60分,180分,360分に設定して溶出ヒ素量を定量した.同時に,膨潤ヒジキ画分のヒ素含量も定量した.ヒ素の定量は熱中性子放射化分析によった.乾燥ヒジキを75〜90℃の浸漬水で水戻しすると,20分以内に総ヒ素量の約70%が溶出されて膨潤ヒジキ中には約30%が保持されている.この内ヒジキ固形物に結合されているのは約10%である.45℃で水戻しを行うと20分以内に総ヒ素量の約60%が溶出され,約40%が膨潤ヒジキ画分に残存するが,この時ヒジキ固形物中に結合するビ素は総ヒ素量の20%以下である.なお,ヒ素溶出の機構が単一ではないことが推察された.

The effects of young barley leaf powder(YBLP) on defecation frequency and fecal characteristics were studied in 61 healthy volunteers(34.1 ± 10.2 years old). The subjects were divided at random into 4 groups;non-dose control group(CG), low-dose group(LG), middle-dose group(MG), and high-dose group(HG). Total examination period was 4 weeks. After one week as the pre-test period, all groups were given a placebo diet for one week(placebo period). For the following 2 weeks(test period), CG, LG, MG and HG was given a placebo diet(not contained YBLP), a low-dose diet(1.5 g), a middledose diet(4.5 g) and a high-dose diet(6.0 g), respectively. In analysis, the subjects were screened under the condition that defecation frequency was below 7 times for one week of the pre-test period. This result showed that MG increased the defecation frequency and estimated fecal quantity significantly for the test period compared with those for the pre-test period, and HG increased them significantly for the test period compared with those for the pre-test period and placebo period. No clinical signs of toxicity recognized in the test period. These results suggest that YBLP has a fecal bulking effect and is useful for safety food material.

To elucidate the mechanisms of adaptation to a low-energy and low-protein vegan diet, we carried out dietary surveys and nitrogen balance studies five times during one year on two women and a man who ate raw brown rice, raw green vegetables, three kinds of raw roots, fruit and salt daily. Individual subjects modified this vegan diet slightly. The mean daily energy intake of the subjects was 18, 14, and 32 kcallkg, of body weight. The loss of body weight was about 10% of the initial level. The daily nitrogen balance was -32, -33, and 1lmg N/kg of body weight. In spite of the negative nitrogen balance, the results of routine clinical tests, initially normal, did not change with the vegan diet. Ten months after the start of the vegan diet, the subjects were given 15N urea orally. The incorporation of 15N into serum proteins suggested that these subjects could utilize urea nitrogen for body protein synthesis. The level of 15N in serum proteins was close to the level in other normal adult men on a low-protein diet with adequate energy for 2 weeks.
