This article is one of series that review psychological studies about eating behavior in humans and animals. In this paper, the role of olfaction on the food selection in humans and animals were reviewed. In our daily use of the words, the word "taste (A-JI)" includes both of the sensation that is arisen from the taste receptors on the mouth and of the sensation arisen from the olfactory receptors on the nasal cavity. We humans sometimes experience "The taste (A-JI) of the food is changed by the respiratory infection." It is known that this change of taste is come from the change of odor perception. Thus, we can not distinguish the taste sensation from the odor sensation. The negative and positive experience to the food changes the hedonics of the "taste (A-JI)" of that food. Some studies in cognitive psychology and psychophysiology suggest that the olfactory hedonics is ready to associate with the emotional memory and that the taste hedonics is innate and robust. The authors suggest that the change of the hedonics of "taste (A-JI)" after some experiences stems from the change of the hedonics of odor. The olfactory experiment in eating behavior have not been documented well. The studies about the hedonics and its changes of the olfactory perception in eating behavior seem to be needed more.

本研究では,健常な大学生男女を対象に,自尊感情と痩身願望の関係について調査を行い,また,特性不安,BMI,体重変動,主観的健康感尺度の下位尺度である心理的安定感,意欲,体調および生活行動習慣,日本語版DEBQ(短縮版)の下位尺度である抑制的摂食傾向,情動的摂食傾向,外発的摂食傾向の各変数間の関係についても同時に調査を行った。その結果,女性においてはこれまでの研究と同様に,自尊感情が低いほど痩身願望が高いという,負の相関関係がみられ,さらに男性についても同様に負の相関関係がみられた。また,自尊感情と特性不安との間に有意な相関がみられるなど,これまでの知見を支持する結果であった。男性において自尊感情と痩身願望との間に負の相関関係がみられたことは,これまでの研究とは逆の結果であった。これは,時代の変化によるものと,日本と欧米の文化の差による,理想とする体型の違いであるということが考えられる。本研究において,女性では痩身願望と抑制的摂食傾向との間に有意な相関がみられ,男性では痩身願望と食行動傾向との間に有意な相関はみられなかった。このことは,男性と女性ではダイエット行動に違いがあるということを示唆している。すなわち,女性はダイエットをするとき食事の摂取量を抑制するという方法をとるが,男性は例えば運動をするなど,別の方法をとるということが考えられる。また,女性において体重の変動と痩身願望や食行動傾向などとの間に相関関係はみられなかった。女性の体重や体型に対する関心は非常に高いものであると考えられるので,この結果は矛盾したものであると考えられる。この点については更なる研究が必要である。本研究では被調査者の数が男性21名,女性66名と少なかったので,男女間の直接的な比較は困難であると判断した。また,得られたデータの信頼性,安定性という点についても問題がある。今後は,より多くのサンプルを集め,男女間の直接的な比較を行い,さらに自尊感情と痩身願望との因果関係を明らかにすることが必要であろう。

There is a bridge name called 'Muma' in Toyohira Town, Hiroshima, which motivated me to look into the spread of the metropolitan culture to local areas. It is interesting to note that names of both 'Muma' and 'Uma' coexist in the same regions. Therefore, it is my assumption that in the medieval period horses in eastern Japan were introduced with great force to western Japan which was growing as a cow-centered livestock area along with the development of its regional economy, and that 'Muma' was affectd by 'u' of ushi (means cow in Japanese), thus assimilating to 'Uma'. On the other hand, this seems quite natural, because the spoken language of 'u' etc. was more prevalent than the written language of 'mu' etc. in the premodern society. However, more extensive research is necessary to further analyze 'Muma' and 'Uma' in the regions concerned.
