The content of potassium, calcium, magnesium, phosphorus, iron, zinc, copper, manganese, carotene, thiamin, riboflavin and ascorbic acid was determined in samples of fresh and cooked broccoli. The cooking methods were boiling (conventional methods), waterless cooking (steaming in pot with little water), and microwave heating.In boiled broccoli, potassium and zinc retention were less than 50%. Carotene retention was over 98%. Ascorbic acid retention was 44%.In the waterless and the microwave cooked broccoli, retention was over 87% for each mineral. Carotene retention was over 98%. Ascorbic acid retention was over 84%.Mineral and water soluble vitamin retention by waterless cooking were higher than by boilng.

市販の果実飲料(86試料)および炭酸飲料(21試料)の糖組成をHPLC法を用いて測定し,以下の結果を得た。(1) Nucleosil 5NH2カラムは5種類の糖(果糖,ブドウ糖,ショ糖,麦芽糖,乳糖)の分離が良好であった。(2) 天然果汁においてミカン果汁の糖組成はショ糖が主成分であり,リンゴ果汁は果糖が多く,ブドウ果汁はショ糖がほとんど認められなかった。(3) 果肉飲料の合計糖量は最も多く,他の飲料に比べ甘口であった。(4) 果粒入り果実飲料および果汁入り清涼飲料の果汁含有率の低い飲料では,添加された糖の影響で,原材料の天然果汁の糖組成の特徴がなく,糖組成およびその比率は果汁の種類に関係なくほぼ一致していた。(5) 炭酸飲料の無果汁は,添加糖類として砂糖単独の使用頻度が多く,果汁入りよりも2倍のショ糖含量であった。

The muscle of rudder fish (one of the deep-sea fishes, Centrolophus niger: Stromateidae) contained a large amount of lipid which showed an extremely higher value for unsaponifiable matter contents and lower saponification value than of other fishes. Moreover the lipid showed very low triglyceride contents. The trimethylsilyl derivatives of unsaponifiable matters were analyzed by the methods of gas-liquid chromatography and mass spectrometry. These results assured that the unsaponifiable matters had the 1, 2-diol structure, and were presumed to be glyceryl ethers. We also investigated about the muscle lipids of some deep-sea fishes (silver king fish: Rexea solandri, silver fish: Sriollela punctata, Black cod: Anopiopoma fimbria). The triglyceride was the major constituent of their muscle lipids. Among them, silver king fish had the lowest saponification value and the highest contents for unsaponifiable matters which showed the same properties as that of rudder fish.
