Secondary amines are known as one of the precursors of nitrosamines which are potent carcinogenic compounds for human being and animals. Distribution and the contents of secondary amines in commercial foods, several kinds of meat, meat products and dairy products were described. Comparing the amounts of secondary amines in raw oods with the amounts in cooked or processed foods, it was proved that the contents of secondary amines in the cooked or processed foods increased markedly. So far as meats were concerned, whale meat showed the highest content of dimethylamine, while the meats of mutton, chicken, pork and beef contained less amount of dimethylamine with trace of diethylamine. Sausage showed larger amounts of dimethylamine than the contents in bacon and ham, because the materials of sausage consisted of pork, whale, mutton and tuna. In dairy products, modified powdered milk showed about five times as much dimethylamine as milk, while the contents in butter and processed cheese were trace. In the case of mackerel and cuttlefish, it was observed that boiled, roasted, canned or dried samples contained more amount of secondary amines than raw samples.

Ingestion, absorption, metabolism and excretion of nitrate and nitrite in humans and experimental animals are described on the viewpoint that carcinogenic N-nitroso compounds are formed by the reaction of nitrite with amines or ureides. Although nitrate is an inactive substance on animals and most of that administered is excreted in the urine, nitrite which is derived from nitrate in vivo by microorganisms in the digestive tracts has highly pharmacological and biochemical activities. The latest problems on the possibility of the nitrification in the body and the nitrate balance are also reviewed. It seems that nitrate highly affects the human health because the substance is easily reduced to nitrite in the body.

Analysis was made on the composition of torula yeast, prepared from sulfite pulp waste liquor, using Torulopsis utilis, in order to elucidate the factor accelerating animal growth. Ethanol extract of torula yeast was fractionated and examination was made on several crystalline substances obtained. Besides D-galactose, ergosterol, and myristic acid, 1, 2, 3, 5, 6-penta-O-acetyl-α-D-galactofuranose was obtained in 0.11% yield. This is the first example of its presence in a natural product and it is interesting that a substance with so many acetyl groups had been found in nature.
