A deodorizing substance in black cumin (Nigella sativa L.), a spice for curry and vegetable foods in Southwest Asia, was examined. The essential oil prepared from the seeds of this plant exhibited strong deodorizing activity against methyl mercaptan, which is a main factor in oral malodor. After purification with silica gel column chromatography, the active substance in black cumin seed oil was identified as thymoquinone. This monoterpenic quinone functions as the main deodorizing substance in this oil against methyl mercaptan. Metabolite analysis suggested that the deodorizing activity may be generated by the addition of a reactive quinone molecule to methyl mercaptan. In the present study, the menthane-type quinone and phenol derivatives exhibited deodorizing activities via this mechanism.

Calcium ion sequestration capacities have been determined for eleven kinds of organic compounds in comparison with sodium tripolyphosphate (STPP) which is known as the most important detergent builder. The organic compounds used in this study were amino carboxylates (EDTA, NTA), hydroxy carboxylates (sodium lactate, tartarate, citrate, gluconate), and dicarboxylates (sodium oxalate, maleate, malonate, succinate, L-aspargmate). The sequestration capacities of these organic compounds depend on the pH of the solution. The most prominent characteristic of sodium citrate was found in the pH 9 region.

The volatile components produced by Leptolejeunea elliptica (Lejeuneaceae), which is a liverwort grown on the leaves of tea (Camellia sinensis), were collected and analyzed using headspace solid-phase microextraction–gas chromatography/mass spectrometry (HS-SPME–GC/MS). 1-Ethyl-4-methoxybenzene (1), 1-ethyl-4-hydroxybenzene (2), and 1-acetoxy-4-ethylbenzene (3) were identified as the major components together with several other phenolic compounds, including 1,2-dimethoxy-4-ethylbenzene, and 4-ethylguaiacol in addition to sesquiterpene hydrocarbons, such as α-selinene, β-selinene, β-elemene, and β-caryophyllene. GC/Olfactometry showed the presence of linalool, acetic acid, isovaleric acid, trans-methyl cinnamate, and trans-4,5-epoxy-(2E)-decenal, as the volatile components produced by L. elliptica.

The volatile components of the Tahitian liverwort Cyathodium foetidissimum was analyzed using headspace solid phase micro-extraction (SPME) and GC-MS. Three volatile components, 4-methoxystyrene (24.4%), 3,4-dimethoxystyrene (28.7%), and skatole (15.9%) were identified as the major components from the fresh C. foetidissimum, along with several aliphatic aldehydes, n-octanal, n-nonanal, and n-decanal. However, (E)-2-nonenal recognized as aged malodor was not identified. In GC-O analysis, 2-aminoacetophenone was detected as one of the minor components with a strong aging note. In fact, C. foetidissimum showed the characteristic aging odor reminiscent the damp smell from old chest of drawers, or the civet like note with very strong feces and urine odor. The mixture consisted of 4-methoxystyrene, 3,4-dimethoxystyrene, and skatole in the detected ratio showed the sedative effect on CNV (contingent negative variation) measurement.

In the previous paper, the antioxidant effect of capsaicin, the pungent principle of red pepper, has been demonstrated. Capsaicin is a N-vanillylamide whose pungency has been known to depend upon the carbon chain length of the fatty acid moiety. In this paper, to obtain the pungent free N-vanillylamides, which are expected to be useful as antioxidants for foods, syntheses of N-vanillylamides of saturated C12 to C22 fatty acids were carried out, and their pungency and antioxidant activity were determined. As a result, their pungency reduced with the elongation of carbon chain of the fatty acid. That is, compared with C9 amide, the pungency of C14 amide was 1/100 and that of C18 amide decreased to 1/1000. On the other hand, the antioxygenic effect of each synthetic N-vanillylamide on methyl ester of safflower oil was almost equal to that of the natural pungent mixture extracted from red pepper. By addition of 0.02mol/kg of synthetic amides in the substrate, the antioxidant activity was equivalent to that of BHA in 0.02% level. In this level, pungency was not found in the sensory even for C12 amide.

食用油脂の主な臭気成分は, 脂肪酸ヒドロペルオキシドの分解で生じるアルデヒドやケトン, アルコール, 酸炭化水素である。含硫化合物や含窒素化合物もゴマ油やオリブ油の臭気成分となる。臭気成分の分析法には官能検査, 比色法, 臭いセンサー, クロマトグラフィー法があるが, ガスクロマトグラフィー法が最も良く用いられている。食用油脂の構成脂肪酸だけでなく, 温度, 酸素, 水分, 光, 酸性物質や, 酸化防止剤, 光増感剤, 金属といった微量成分も臭気成分の生成に影響する。

We compared the physiological activities of sesame seeds rich in lignans from three varieties (Gomazou, Maruhime and Maruemon), and those from a conventional cultivar (Masekin) in rats. The sum of the values of fat-soluble lignans (sesamin and sesamolin) in seeds of Gomazou, Maruhime and Maruemon varieties was approximately double the value in Masekin. Seeds from Maruemon contained fat-soluble lignan most exclusively as sesamin while other varieties contained sesamin and sesamolin at about a 2:1 ratio. After a 16 d experiment, sesame seeds, added at 200 g/kg to the experimental diets, increased the activity and mRNA levels of fatty acid oxidation enzymes. Increases were stronger with seeds rich in lignans than with seeds from Masekin. In contrast, sesame seeds lowered the activity and mRNA levels of lipogenic enzymes. However, sesame seeds from all the varieties were comparable in affecting these parameters. Serum triacylglycerol concentrations were lower in rats fed diets containing sesame seeds rich in lignans than in those fed a diet free of sesame seeds or a diet containing seeds from the Masekin variety. Serum malondialdehyde (a marker of lipid peroxidation) was lower in rats fed diets containing sesame seeds rich in lignans than in those fed a sesame seed-free diet or Masekin diet. It is apparent that sesame seeds rich in lignans, irrespective of lignan composition, more profoundly affect hepatic fatty acid oxidation and serum triacylglycerol levels and possibly attenuate oxidative stress. Therefore, consumption of sesame seeds rich in lignans hopefully results in physiological activity to promote health.

This study includes an evaluation of friction on the fingers, palms, and forearms of 20 subjects using a sinusoidal motion friction evaluation system. The effects of the changing water content in the stratum corneum at each position as well as the skin elastic modulus on the friction parameters were analyzed to show the factors governing friction dynamics. We observed a significant delay time (δ) and a stick–slip phenomenon during the sinusoidal motion friction processes. These dynamic phenomena are due to the softness and viscoelastic properties of human skin. The findings regarding the response of human skin to frictional stimulation under accelerated conditions facilitates a better understanding of the dynamic and mechanical properties of human skin.

Obesity, a lifestyle disease resulting from excessive caloric intake and insufficient physical activity, results in a state of chronic inflammation. A food ingredient that suppresses chronic inflammation could help prevent associated diseases. Sweet basil (Ocimum basilicum L.) is a herb from the Lamiaceae family with some reported anti-inflammatory effects. Via this in vitro study, we aimed to investigate whether sweet basil exerts anti-inflammatory effects in obese patients. Fresh sweet basil leaves were freeze-dried and powered. After that, this was extracted with 80% methanol. After 3T3-L1 adipocytes were cultured with sweet basil extracts at final concentrations of either 5 or 25 μg/mL for 24h, RAW264.7 macrophages were seeded onto this adipocytes and co-cultured for 12h. We determined the effects of sweet basil extracts on inflammatory cytokine expression by real-time PCR or western blotting. Sweet basil extracts reduced the expression of inflammatory cytokine mRNA induced by co-culture, including that of IL-6 (Il6), IL-1β (Il1b), TNF-α (Tnf), and CCL2 (Ccl2). In addition, sweet basil extracts suppressed the mRNA expression of NF-κB (Nfκb1), a transcription factor of inflammatory cytokines. In an investigation of costimulatory CD137 (Tnfrsf9)/CD137L inflammatory signaling, a member of the TNF super-family, sweet basil extracts inhibited Tnfrsf9 expression induced by the co-culture. Therefore, the results of this study indicated that sweet basil extracts have an anti-inflammatory effect against adipocyte-induced inflammation, possibly through suppression of Tnfrsf9 expression.

A pseudo-first-order reaction constants (kobs) of dyes having a single hydroxyl group inthe molecule (Orange I, Orange II) by various bleaching agents were measured as a function ofpH. Used bleaching agents were hydrogen peroxide, peracetic acid, potassium permonosulfate, and sodium hypochlorite. The kobs of each dye showed maximum at intermediate pH betweenan acid dissociation constant of bleaching agent (pKa) and an acid dissociation constant of dye (pKd). Distribution curves of kobs on pH showed symmetrical narrow distribution when the value of pKd was close to pKa, and symmetrical broad distribution when the value of pKd was far apart from pKa. These results were analyzed with reaction kinetics by assumming the ionic reaction among protonated and deprotonated form of the bleaching agents and the dyes. It wasproved that the distribution curves of kobs on pH follow the following equation.kobs= [A] t/ (1+ [H+] /Ka) (1+Kd/ [H+]) where [A] t is the total bleaching agent concentration, k1 is a second-order reaction constant byassuming the reaction between protonated dye ; [DyeH] and deprotonated bleaching agents ; [A-]. The calculated values obtained by above equation were in good agreement with the observed values. Therefore, it was concluded that the decoloration mechanism of the dyes by bleaching agents conforms to the ionic reaction among protonated and deprotonated forms of the bleaching agents and the dyes. We have named this decoloration mechanism as “the mutual ionic reaction mechanism”.

We report the enhanced degradation of a widely used brominated flame retardant, tetrabromobisphenol-A (TBBPA), which is soluble only in organic solvents and strongly alkaline solutions, where most advanced oxidation processes (AOPs) for such substrates tend to be rather inefficient. We further report an environmentally friendly method (microwave-induced liquid-in-plasma; MLP) that operates efficiently in alkaline aqueous media without the need for organic solvents to enhance the solubility of TBBPA in water. The enhanced debromination and almost complete mineralization of TBBPA under alkaline conditions occurs within 20 min of MLP irradiation. This method, which is a new member of the AOP family, provides a simple and green approach to detoxify aqueous media contaminated with TBBPA, which requires only electric power and neither catalysts nor oxidizing agents. Several intermediate species have been identified by liquid chromatography/mass spectrometry (LC-MS), following events that involved reactive oxygen species (ROSs) such as ·OH, whose first task was to approach the substrate at carbon atoms bearing the highest electron densities.

Various kinds of free fatty acid were examined on their antitumor activity against ascites tumor cells, Survival days of mice after administrations of free fatty acid were observed. From these data I.L.S. (Increase of life-span) was culcurated and used as a parameter of Antitumor activity. Effective fatty acids against Sarcoma-180 were as follows : Pentadecanoic acid in saturated fatty acid series of carbon number 6 to 24, oleic acid in mono-unsaturated fatty acid series, and α-linolenic and docosahexaenoic acids in poly-unsaturated fatty acid series.The most effective fatty acid in our antitumor activity research is (hydroxy phenyl) stearic acid.The mechanism on antitumor activity of free fatty acid is not made clear sufficiently but it was suggested that disorder of membrane caused by fatty acids is responsible for their antitumor effect.

We recently observed that the weak near-infrared (NIR) band near 5260 cm–1 was relatively more intense for extra virgin olive oil (EVOO) than for refined olive oil (ROO). We also observed that its intensity was diminished upon heating and erroneously presumed that it may be attributed to volatile carbonyl components in EVOO. In the present study we demonstrate for the first time that this band is primarily attributed to a water O-H combination band. To accurately determine the intensity of this weak band, observed on a shifted and sloping baseline, we measured the peak-to-peak (p-p) height of its first derivative. An exponential calibration curve for p-p height versus gravimetrically-determined concentration of spiked water was satisfactorily generated. The calibration curve was first evaluated by using independent sets of gravimetrically prepared test samples. Subsequently, it was used to determine the moisture content, a quality parameter, for a limited set of authenticated reference olive oils whose quality and purity were confirmed by official methods. These concentrations, 0.098-0.12% H2O (w/w) for EVOO, 0.022-0.030% H2O (w/w) for ROO, and 0.028-0.054% H2O (w/w) for pomace olive oil (POO), were consistent with those reported in the literature. For 88 commercial products investigated, the moisture levels fell in the range from 0.026% to 0.13% (w/w). The correlation between moisture content and other olive oil quality parameters has been reported in the literature and has yet to be further investigated.

The effect of the magnesium oxide adsorption on the removal of free fatty acid in the oil which was used for frying, was tested. This method was proposed by Hoovers in U.S. 3, 231, 390.The prevention of the increase of free fatty acid in the oil during deep fat frying is very important. This increase is mainly caused by the hydrolysis of fat and the rate of hydrolysis is proportional to the acid concentration. The effective method to prevent hydrolysis is, therefore, to inactivate the action of free fatty acid as is produced.Using the continuous water-spraying and heating system and the automatic test fryer, the effect of the magnesium oxide adsorption was tested (Table-4, Fig. -2). As a result, the following facts were recognized. The free fatty acid content in the oil has been maintained in low amount at the initial stage. However, the magnesium soap which was produced by the reaction of magnesium oxide with the free fatty acid, dissolved into the oil and accumulated gradually with increase of the frying time, and this soap promoted hydrolysis significantly. Therefore, the higher sensitivity of the oil to hydrolysis resulted in the higher content of free fatty acid as compared with that of the control test, at the latter stage.As mentioned above, this method is not practical.

We applied matrix-assisted laser desorption/ionization time-of-flight mass spectrometry (MALDI-TOF/MS) to screen for glycolipid-type biosurfactant (BS) producers. A crude extract of Pseudozyma antarctica, a well-known mannosylerythritol lipid (MEL) producer, was initially subjected to MALDI-TOF/MS. The spectrum of the extract showed the accumulation of diacylated MELs in culture. We then screened 80 environmental samples for BS-producing yeasts, and extracts from broth cultures of the selected five strains were examined using MALDI-TOF/MS. The results showed that all five strains produced MELs, whereas four strains also produced cellobiose lipids (CLs). By D1/D2 region sequence analysis, the MEL-producing strain was assigned to P. antarctica while the four MEL- and CL-producing strains were assigned to P. hubeiensis. These results demonstrate that MALDI-TOF/MS is a rapid and reliable tool to detect BS molecules in crude extracts of broth cultures to screen for glycolipid-type BS producers.
