Recently, new types of ferrous fertilizers that release soluble Fe have been developed for use in Fe-sufficient soils. We applied ferrous chloride (FeCl2) to leaves of young eggplant (Solanum melongena) grown in Fe-sufficient soil. Foliar application of FeCl2 brought about an increase in the number of axillary shoots and fresh weight of whole shoot. Moreover, concentrations of Ca and Mn of leaves were increased though the treatment solution did not contain Ca or Mn. Foliar application of FeCl2 could increase not only Fe concentration but also Ca concentration in leaves of leaf vegetables.

DNPH法,DP法及びHPLC法を用いて20種類の食品中の総AsA含量を測定し,測定法による値の相違について検討した.その結果,トマトジュース,ジャガイモ,アルファルファモヤシ,ダイズモヤシ及び調製粉乳では,いずれの測定法によってもほぼ一致した値が得られた.しかしブラックマッペモヤシではHPLC法,紅茶及びシイタケではDP法が,それぞれ他の測定法に比べ高値を示したので,DNPH-HPLC法を用いてさらに検討した.その結果,ブラックマッペモヤシではDP法,DNPH法とほぼ同値となったが,紅茶ではDNPH法よりも低値を示し,シイタケでは検出されなかった.これより紅茶及びシイタケのAsA測定法については,さらに検討の余地があることが判った.

Dried foods have been developed over the years by our society for diets in the world.Especially, during war or shortage period, the improvised rice is the food most needed bypeople.In the Edo era, common people carried some umeboshi and a cup of salt as a foodhabit when they traveled.This was the poorer portable foods in that era.In this paper, we will try to discuss the transition of the characteristics of dried foods based on utilization and culture.

Numerous epidemiological surveys have shown that consuming coffee can prevent cancer development. Caffeine and chlorogenic acid are the most well known constituents which are included in coffee and prove to have an positive effect to prevent cancer. Although these constituents are known to directly act on anti cancer machineries, such as anti-oxidant effect. There are also studies showing that benefit of functional food is exhibited by metabolic changes. Therefore, we may anticipate that changing metabolic pathways may occur during coffee intake and further expect lowering the cancer risk. Thus, in this study, we analyzed the effect of administration of coffee to Eker rat which are a renal cancer and a metabolic syndrome model rat. By giving 1% coffee for 100 days, we found that renal cancer development was suppressed. We further analyzed the metabolic change by metabolomic analysis in liver and observed that the abnormal carbohydrate and ketone body production in Eker rats were restored by coffee consumption. We also confirmed that these effects were not due to the recovery of tumor suppression gene TSC2 expression. Thus, coffee may have a anti-cancer effect by changing the metabolic pathway and lower the risk factors which may lead to cancer development.
