We analyzed the levels of free amino acids and related substances, and nucleic acid-related compounds in a niboshi extract soup stock and niboshi-flavored mixed seasoning soup stock by using an amino acid analyzer. Niboshi (30 g) was soaked in 1 l of water for periods of 0, 30, and 180 min. Each solution was boiled for 5 min and used to prepare the niboshi extract soup stocks. These soup stocks contained serine, 3-phospho-1-serine, taurine, threonine, aspartic acid, asparagine, glutamic acid, glutamine, glycine, alanine, valine, cysteine, methionine, cystathionine, isoleucine, leucine, tyrosine, tryptophan, phenylalanine, ornithine, lysine, histidine, arginine, hydroxyproline, proline, urea, NH3, and nucleic acidrelated compounds of ATP, ADP, AMP, IMP and HxR. The mole fraction of glutamic acid in the total amino acids and their related substances in the mixed seasoning soup stock was 95%. The only nucleic acid-related compound detected in the mixed seasoning soup stock was IMP. The glutamic acid content was over 11.8-fold higher in the mixed seasoning soup stock than in the niboshi extract soup stocks. The IMP content was over 2.9-fold higher in the niboshi extract soup stocks than in the mixed seasoning soup stock.

Leptin is a 16kD protein that is produced by adipocytes and regulates fat stores and body weight by affecting the appetite and thermogenesis. It is known that a correlation exists between the circulating leptin level and body mass index. It is also known that the plasma leptin level is higher in women than men, particularly in pregnant women, and rises with the onset of puberty. Leptin has been shown in vitro to affect the hypothalamic-pituitary release of gonadotropin and ovarian steroidogenesis, suggesting that leptin may be associated with normal reproductive events. This paper reports the relationship among the plasma leptin level, sex hormones, nutritional intake and eating behavior for ovulatory functions.The serum leptin concentration was correlated with the serum estradiol concentration, and changed during the menstrual cycle. The serum leptin concentration in the group with an ovulatory dysfunction was lower than that in the group with regular ovulation. The fat intake, irregularity of eating behavior and smoking habits in the group with the ovulatory dysfunction were more prominent than in the group with regular ovulation. The lower leptin level may have reflected nutritional abnormalities and eating behavior.Leptin should therefore be considered a key factor for indicating regular ovulation or an ovulatory dysfunction.

今日,投稿型レシピサイトが普及しているが,これらは詳細な栄養量情報が記載されていないことが多い.よって,ユーザは自身で栄養を考慮しなければいけない.そこで,ユーザの身体情報やアレルギー食材を元に,様々な栄養素を考慮した献立表推薦システムを提案する.また,ユーザは実際に食べる食品を入力でき,その食品のエネルギー量を元に献立表が再調整される.また,栄養士の評価を受け,本システムの妥当性を確認した.

Background and objectives : To elucidate modulators of rapid eating behaviors, behaviors in elderly residents in a nursing home were observed using a video recording methods. Methods : Participants of 17 elderly residents were employed. Durations and numbers of chewing of diets with and without soup were measured. Subjects were divided into the fast-eating group and slow-eating group based on duration of chewing. Relationship between duration of chewing of diets with soup and duration of chewing of diets without soup was analyzed by linear regression. Results : Proportion of duration and numbers of chewing in diets with soup to those of diets without soup in the fast-eating group was lower than those of the slow-eating group. Both of duration and numbers of chewing of diets without soup depended on those of diets with soup (p=0.001) . Conclusions : Modulators of rapid eating behaviors in elderly residents might be lower duration and numbers of chewing of diets with soup.
