This study was aimed at examining the potential of processed meat produced from cultured meat, and estimating effects of consumer awareness of animal welfare and environmental issues to the WTP for cultured meat. The main findings are as follows. First, the average WTP for hamburgers made from tissue -cultured meat is JPY 363. Second, the WTP of respondents who know about, or value, animal welfare is shown to increase. The WTP of respondents who resist the killing of animals, and who recognize that the consumption of livestock products has a negative impact on the environment, is higher.

An interdisciplinary literature review was conducted to articulate the achievements and challenges of food education research. The eligible articles (n=325), which included the keyword, “shokuiku” (food education in Japanese), were identified from the e-databases. First, its disciplinary distribution was delineated, demonstrating the relative dominancy of home-economics and medical sciences over other social sciences and humanities. Second, the research trend in agricultural economics was particularly investigated, and its achievements were articulated around three research themes (concepts and definitions, promotion systems and impact evaluation). However, several challenges were left unresolved, particularly the nutritionistic, neo-liberal, nationalistic and gendered ideologies internalized in the current food education. Third, the relevant disciplines were explored, identifying several useful theoretical discussions in social sciences and humanities for the abovementioned challenges, while also confirming that these problems were not fully addressed in the most dominant home-economics. This review could inform a future “inter-disciplinary” discussion on food education.

We know a trend toward supply of the detailed production history information of a food at the point of purchase to consumer with trace-ability system in the food chain. On the other hand, psychological consumer behavior research has pointed out the limitation of information processing capacity and therefore the adoption of the simplified information processing methods as heuristics at the point of purchase.This study has given the consumer information processing model has been based on comprehensive models as EBM Model, Bettman Model, Elaboration Likelihood Model and so on. Based on the model, we have collected the protocol date of consumers by thinking aloudmethod at the point of five kinds flesh foods purchase in a retail shop, and have analyzed the number of search items and attributes of the foods, the kinds of decision strategy and the times of the information processing. As the results, we have pointed out routine problem solving or limited problem solving included heuristic decision strategies in the consumer information processing at the point of purchase. Accordingly, it is not a realistic idea that consumers make it a practice to refer the supplied great detailed information at the point of food purchase. It is desirable that we supply essential information of food attributes with simplified condition to consumers.

The COVID-19 pandemic is changing our food consumption behavior in many ways. Using the concept of food value, our analysis tried to capture the impact of the pandemic on what we focus on during food purchase. We found two main changes in food value trends. First, the number of people who place priority on price has declined. Second, we found a decrease in the number of people who strongly evaluate foods based on only one value. These changes seem to impact young people more, and the difference in food priorities between the rich and poor is reducing.

This report clarifies that the effectivity of in-store display that shows “the quality of product process” of gelato made from milk that were fed self-supplied feed. We investigated the feature of consumers' information processing and the effectivity of information provision with protocol analysis by thinking aloud method and purchase experiment. As a result, we found that provision of the place of feed production alongside that of milk production gains consumers' interests in feed.

The purpose of this paper is to clarify the whole picture of umeboshi (Japanese pickled plums) food system, and its structural changes, focusing on differences among producing regions and their interrelationship.In the existing food system analyses, the spatial viewpoint has been weak. Then this paper has tried to refine the existing structural framework by introducing a new sub-structure named “spatial structure”, that means differences among producing regions and their interrelationship in the structures of the food system. By using the renewed framework, the characteristics of umeboshi food system have been outlined as follows.Firstly, it has been found that between the Minabe-Tanabe region of Wakayama, the largest producing region, and Wakasa of Fukui, one of the medium and small producing regions, there are many differences on the factors which define the figure of the food system. In addition, the two food systems viewed from Minabe-Tanabe and Wakasa intersect at the processing stage through the raw material supply. This intersection underpins a hierarchical relationship between regions. These findings suggest that it is essential to focus the “spatial structure” of the food system.

The production and utilization of biofuels is promoted in many countries and regions, and these markets are expected to expand in the future. Our study uses a dynamic partial equilibrium model to examine how Brazilian bioethanol production will impact Brazilian and world sugar markets. If the Brazilian government abolished anhydrous blends for gasoline beginning in 2013/14, the international sugar price would decrease by 12.4% by 2017/18. The study result shows that\ Brazilian bioethanol consumption has an impact on international sugar prices. While the lower international sugar price could be beneficial to sugar-consuming regions, it could damage sugar-producing and sugar-exporting countries that depend heavily on sugar exports. Thus, it is concluded that the Brazilian bioethanol policy has a floor price effect for the international sugar price and an important role in maintaining world sugar production and the sugar industry at a reproduction level.

Tohoku Regional Agricultural Administration Office launched review meetings called “Japanese Sake Terroir Project in Tohoku”. They aimed to encourage production of sake brewing rice as well as sales and export of sake made from rice grown in Tohoku, a famous region for rice production and sake brewing. Rice farmers, sake breweries, and producer's groups from some prefectures in the Tohoku region participated in the meetings to share information on the development of new strains of rice, distribution channels, and cooperation between rice producers and sake brewing manufacturers. The formation of the terroir is expected through deepening of the cooperation and expansion of high quality products.

The purpose of this article is to investigate the structure of market channels and the impacts of the direct marketing on farm sales, focusing on the top one percent rice farms (large rice farms). We have used the agricultural census farm-level data, to which was applied propensity score matching. Our findings in this article are as follows. Firstly, more than half the large rice farms used multiple marketing channels and the number of market channels used were increasing. Secondly, direct marketing to consumers by farms ranked second and shipment to agricultural cooperatives ranked first for both large rice farms and all rice farms. Thirdly, in recent years, for large rice farms, the ratio of the implementation of direct marketing to consumers has been decreasing and the farms are changing shipping destinations from the direct marketing to consumers to retail sellers, food manufacturers and the food-service industry. Fourthly, the results of propensity score matching indicate that direct marketing to consumers increases farm sales for family-owned management entities, while this is not valid for organized management entities.

In Japan, after the further promotion of trade liberalization, there is the possibility to increase the import of intermediate-goods such as vegetable oil and flour milling. The question we ask here is how will the change of grain market condition, e.g. trade liberalization as mentioned above, affect the structure of future grain food system in Japan. To answer this question, we focus on the soybean meal, of which import has increased, and examine how the trends of recent international grain market change the vertical relationship and firm's behavior of soybean meal food system. In this paper, we attempt 1)to grasp the overall structure of soybean meal food system by using the analytical framework proposed by Niiyama[7]; and 2)to examine the structural transition of soybean meal food system. By doing these, this paper aimed to suggest the implication for future grain procurement regime in Japan.The results showed that Japanese soybean meal food system mainly consists of general trading companies, vegetable oil manufactures and animal feed manufactures. In the system, however, the power of vegetable oil manufactures is shrinking because of the current increase of soybean meal import. With the concern of the threat of intermediate-goods import increase, each economic agent seeks the alternative to domestic production of intermediate-goods, such as the overseas expansion of general trading companies and vegetable oil manufacturers.

Supplied by food businesses, foods could have huge effects on the health of a wide range of consumers, who take in them. For this reason, the work-related deviate behavior of food-business employees may cause extensive and severe health damage. Nevertheless, there are few studies relevant to the issue in Japan. The purpose of this paper is to reveal mechanism of generating deviance of food-business, through a case study of the mass food poisoning caused by the dairy processor on the basis of white-collar crime theory.I designed a model of the white-collar crime generating mechanism, which focuses on basic requirement of crime (motive, justification, and opportunity), organizational culture, trade subculture, and interaction among these factors. The article analyzed data from the decision and the investigative document of the Public Prosecutor's Office with the model, and obtained the following results.First, some deviances involve the motive (fear of failure) and justification, which are characteristic of white-collar crimes and which correspond to the above-mentioned model. Second, the leader of a plant, where the deviances occurred, had had a past experience of failure, which amplified his fear of failure at the incident. Third, it was suggested that the leader's fear would have promoted appearance of the plant's organizational culture which gave priority to cost reduction over product safety. However, I did not verify that the organizational culture existed in the third point. Additionally, the case included a particular type of deviance which the model cannot explain, which needs to be modified. These issues remain to be solved.
