抗酸化作用の一つと考えられる抗リポキシゲナーゼ活性は、豆類、茸類、にんにく以外の野菜類では、緑色の濃い野菜(ニラ、シソ、ホウレンソウ、ブロッコリーなど)に多く、キャベツ、キュウリのような淡色野菜に少ないことが観察された。このことより、カロテノイドが抗リポキシゲナーゼ活性を示すことが考えられた。そこで、トマトピューレーから抽出、分離、精製したリコペン、ほうれん草から抽出、分離、精製したβ-カロテン、ルテイン、ビオラキサンチン、ネオキサンチンを用いて大豆リポキシゲナーゼの抑制活性を測定した。その結果、同濃度における抑制活性はヒコペンが最も強く、ついでネオキサンチン、ビオラキサンチン、ルテイン、β-カロテンの順になった。以上のことから構造と活性の関係を考察するとリコペンの活性の強さはイオノン環が開いていること、二重結合の数が13以上あることが大きな影響をもっており、その他のカロテノイドでは極性が高い程活性が高くなる傾向がみられた。ゆで調理操作、揚げ調理操作過程におけるカロテノイド組成の変化を調べた。蒸留水と1%食塩水でコマツナをゆでた場合、ゆで時間が長くなるにつれてまずビオラキサンチンが分解、酸化され、次にネオキサンチン、ルテインと続き、β-カロテンは比較的安定であった。1%食塩を加えた方が、総色素量では変化量が少なかったが、各カロテノイド量では、蒸留水とは違いがみられなかった。160℃で揚げた場合は、ゆで操作と同様ビオラキサンチンの減少が大きく、ルテイン、β-カロテンの減少は少なかった。以上のことより、野菜類の加熱調理において、キサントフィル類は、β-カロテンより先に活性酸素の影響を受けやすく、自ら減少することで抗酸化作用を示し、その結果ビタミンA効力を持つβ-カロテンが比較的安定に保たれていることがわかった。

本研究の目的は、感染予防実践者である看護職のコンピテンシーの実態を把握するための質問紙を開発し、作成した質問紙を用いて、日本と英語圏の感染予防実践者の看護職のコンピテンシーを把握すること、感染予防実践者である看護職のキャリアレベルごとに共通して求められるコンピテンシーを明らかにすることである。感染管理疫学専門家協会(APIC)から発表されたコンピテンシー・セルフアセスメント・ツールに回答してくれた67名の感染管理認定看護師のインタビューデータを各項目の回答理由毎に質的に分析した。その結果から、感染症プロセスの明確化、医療関連感染サーベイランスと疫学調査、感染性微生物の伝播予防・制御、マネージメントとコミュニケーション(リーダーシップ)、質・業務改善と患者安全、教育と研究、労働衛生の7つのカテゴリーを含む127項目からなる調査票を作成した。プレテストを実施し内容を精選し、基礎情報11項目を加えた138項目からなる感染予防実践者のコンピテンシーに関するオンライン調査を実施した。日本の感染予防実践者への調査協力は、日本感染管理ネットワーク(Infection Control Network in Japan)に依頼し、所属会員のメーリングリストから協力依頼を行った。また、日本看護協会の感染管理認定看護師ならびに感染症看護専門看護師の登録者のうち所属非表示者などを除外した2355名に協力依頼の葉書を送付した。5月17日現在で413名から回答を得た(回答率18%)。研究を除いた全カテゴリーで、感染予防実践者としての経験を積むことで各能力が向上していることが明らかになった。現在、APICの研究委員会の副委員長を通じて、感染予防実践をしている看護職への調査協力を依頼しており、協力への内諾は得ている。調査時期などの詳細をつめ、英語版の同じ調査票を用いてオンライン調査を実施する予定である

豆乳は一般的には濃縮によって粘度が上昇し、やがて流動性を失うものと考えられており、これまで濃縮についてはあまり検討されてこなかった。しかしながら濃縮のメリットを考慮すると豆乳をどこまで濃縮できるのかについて検討することは重要なことと考えられた。そこで、豆乳を減圧下にて蒸発濃縮し、粘度と濃縮度の関係を明らかにすることを試みた。本年は、国産大豆および輸入大豆を用いた2種類の市販無調整豆乳を試料とし、エバポレーターを用いて蒸発濃縮を行った。また濃縮条件として豆乳を加熱する湯浴の温度を3つに変化させて、各々の影響について解析することとした。その結果、固形分濃度の上昇とともに豆乳の粘度に指数関数的な上昇がみられた。そこで、粘度の常用対数に対してプロットし直してみると、2つの豆乳ともに粘度上昇は2本の直線で表すことが可能であった。さらにエバポレーターの湯浴温度を55℃から65℃、75℃と上昇させると低濃度側の回帰直線は温度に依存せずほぼ同様であったのに対して高濃度側の回帰直線は温度の上昇とともに上方へ移動することが分かった。つまり豆乳を濃縮した際の粘度変化は単純に指数関数的な上昇を示すのではなくて、2段階の挙動を経て変化することが明らかとなった。また品種や温度条件によって2本の回帰直線の交点の位置は影響を受けることが示された。今回用いた豆乳試料の場合、55℃の比較的低温の蒸発濃縮条件下で固形分濃度25%程度までは濃縮可能であることが分かった。

Dudeney's round table problem was proposed about one hundred years ago. It is already solved when the number of people is even, but it is still unsettled except only few cases when the number of people is odd. In this paper, another solution of Dudeney's round table problem is given when n=p+2, where p is an odd prime number such that 2 or -2 is a primitive root of GF(p). The method of constructing the solution is new.

A set of Hamilton cycles in the complete graph K_n is called a [double] Dudeney set, if every path of length two lies on exactly one [two] of the cycles. It has been conjectured that there is a Dudeney set for every complete graph. It is known that there exists a Dudeney set of K_n when n is even, but it is still unsettled when n is odd. In this paper, we define a black 1-factor and we show that if there exists a black 1-factor of K_n, we can construct a Dudeney set of K_<n+1>. Furthermore, we extend it to a double Dudeney set.

School of Administration and Informatics (hereafter, AI) at the University of Shizuoka holds a monthly faculty research session. In the academic year of 2001-02, it was decided that the research session would adopt the systems conversation (i.e. brainstorming) style of the International Systems Institute, and have the following steps: 1. Decision on the theme to work on; 2. Input paper circulation and dialogue by email; 3. Conversation session; 4. Circulation of report from a conversation session, which also serves as the input paper for the next session; and, 5. Final report based on the above interactions. Participation in the input paper submission, conversation, and report writing is all-voluntary. It was decided that the theme be "Roles of Information Education and Computer Education in the Educational Program of the School of Administration and Informatics." This is a topic that all the AI faculty from various academic disciplines could work on. Through such a conversation process, we have two major outcomes: 1. Dialogue among the AI faculty across their A (Administration and Accounting), M (Mathematics and Model-building), and C (Computer and Communication) backgrounds. 2. Common understanding that the AI faculty members have various interpretations of the concepts such as information education; computer education; nature and levels of information and computer-related knowledge and skills the AI graduates are expected to have. Yet, regarding the necessary levels of knowledge and skills required for the AI graduates, the AI faculty seems to have, or have come to an agreement on their contents. Another point of agreement is that information education and computer education need to be linked not only to their advanced levels, but also the A and the M courses.

A set of Hamilton cycles in the complete graph on n vertices is called a Dudeney set, if every path of length two lies on exactly one of the cycles. It has been conjectured that there is a Dudeney set for every complete graph, but it is still unsettled. Furthermore, little is known about the numder of non -isomorphic Dudeney sets. In this paper, we construct non-isomorphic Dudeney sets using perfect 1-factorizations and determine the number of the Dudeney sets and the automorphism groups.

本論文では「一般化アダマール行列」を新しく定義し,いくつかの次数についてそれらを構成する.一般化アダマール行列を重回帰分析の計画行列へ適用すると,効率的な解析ができることを示す,さらに,実験計画法の構造式を一般化し,一般化アダマール行列を適用することで,線形関係を持つ因子も解析が可能になることを示す.

We analyzed economic and social development in 42 countries of the world with statistical data from the World Bank and the United Nations Development Program. Using Principal Component Analysis, we found 6 principal components; economic and social development level, economic growth potential, trade dependency, agricultural development, agricultural potential and inflation. We also categorized the countries using Cluster Analysis.

In this paper, we prove that there exists a perfect 1-factorization of the complete bipartite graph K_<n,n> if there exists a perfect 1-factorization of the complete graph K_<n+1>, and when n > 2 is even, there does not exist perfect 1-factorizations of K_<n,n>.

We have surveyed student satisfaction with the curriculum, the graduation research paper system, the facilities, the services, etc. in the School of Administration and Informatics, University of Shizuoka from 1997. In this paper we report and analyze the results of the survey. This will be used as the basis for improvements of the educational environment of our university.

We will show that logistic curves explain many trends of growth, such as economic growth and increase in population, taking the case of the telephone penetration rate. We will extend logistic curves to the general sigmoid curves and give some examples using probability density functions.
