As a step toward detecting the role of resistant starch (RS), the effects of boiled rice or bread intake on evacuation were examined. Ten subjects aged 21-22 were fed two types of prescribed diets of 3 meals per day for 7 successive days. Each type consisted of a different staple food; boiled rice or bread. The subjects were fed the same type of meal for 7 days and the frequency and amount of evacuation was recorded by the subjects. Analyzing the data showed the following results. The estimated total fiber contained in the bread each subject consumed was 6.3 g/day, and the estimated total fiber contained in boiled rice was 1.4 g/day. That is, there was 4.5 times more total fiber in bread than in rice. The frequency and amount of the evacuation tended to increase when boiled rice was ingested compared with the period when bread was ingested. Based on these results, we suggest that the fibers in the boiled rice lead to an increase in the frequency and amount of stools as compared with the fiber found in bread. We speculate that more RS is contained in the boiled rice than in the bread.

In order to examine and compare the content of resistant starch (RS) under different conditions, the amount of non-starch polysaccharides (NSP) in boiled rice (A. boiled, B. boiled and frozen and defrosted), purchased bread (A. just after purchase, B. frozen and defrosted), and retort rice (A. microwaved, B. microwaved and frozen and defrosted) were measured using the Englyst method. The results were as follows: There was no difference in the content of NSP in the boiled rice A and B. The amount of NSP content in the purchased bread A was lower than that in the purchased bread B. Therefore, we could not calculate the amount of RS. The NSP content of the retort rice B was higher than that of the retort rice A. The RS content of the retort rice was 1.0±0.8 (g/100 g). The NSP content of the purchased bread was significantly higher than that of the boiled rice and retort rice.

A government investigation shows that in most cases Japanese married women who go back to work after a hiatus are employed as part-time workers. There seem to be three main reasons for this: Lack of enough ability to work as a regular employee, lack of self-confidence needed to be a full-fledged member of society, and lack of knowledge about how to seek employment. In order to help married women overcome this situation, the Japanese government has instituted the "Re-Challenge Support Project" for married women. Many universities participate in the project by providing lectures designed to teach various systematic, practical, professional business skills or general knowledge that will help these women reenter the working world. The authors gave a questionnaire research to participants in this program at S Women's University, analyzed the learners' needs, and assessed the educational effect on them of these lectures. The authors also consider how the Re-Challenge Support Project might be improved and expanded.

Since 2007, the University of Tokyo and the TV Asahi Corporation have been promoting a three-year practical media literacy project called the "Roppon Project." As part of "Roppon Project," the "Roppon Summer Holidays" was designed in order to focus on parent-child participation. This paper analyzes the effect of this intervention study. The results of "Roppon Summer Holidays" were evaluated using pre- and post- question- naires with 32 elementary school children, 3 junior high school students and the 28 parents who had joined the TV station tour or the TV-puzzle workshop. Both children and parents displayed highly positive attitudes and feelings toward the project, expressing feelings such as: "I really enjoyed the project and finding out what goes on behind the scenes" and "I changed my point of view about TV." They recognized the merits of TV, such as "TV can provide a variety of information immediately" and "Watching TV can encourage lively conversations with my family or friends." The project worked as a meaningful bridge between the participants and TV.

Jane Bowles was under-evaluated in the world of letters until the late 1970s, in spite of the admiration of Tennessee Williams, Truman Capote and Alan Sillitoe. Since the 1980s Bowles has been reevaluated by critics using approaches, including feminist, postmodern and postcolonial criticism. I consider her only full-length novel, Two Serious Ladies. I analyze Jane Bowles's unique structure, style and themes. The two central figures, Miss Goering whose name derives from the Nazi, Hermann Goring, and Mrs. Copperfield each travel to increasingly dangerous places. In their behavior they seek out profanity or moral degradation. I interpret the sexual deviation of the two ladies by applying Bowles's obsession with Kafka's passage, "From a certain point onward there is no longer any turning back. That is the point that must be reached." and employed Foucault's conception of "transgression."

The objective of the present study is to investigate approaches to dietary education at nursery schools by elucidating the actual dietary life of nursery school children and the dietary awareness of their parents. A questionnaire survey was conducted on a total of 1,049 parents of 4-year-old children attending public nursery schools in Ward S of Tokyo. Ninety seven point two percent of the responses were valid and the following results were obtained:1 A total of 97.4% of children ate breakfast every day, while 2.6% sometimes skipped it. Reasons for skipping it were lack of appetite(55.6%)and lack of time(27.8%).2 Regarding the people children ate breakfast with, the most common response was the mother(81.8%), and while few responded that their children ate alone(2.8%), 10.2% indicated that their children ate with other children only. Eating with other children only was associated with a low level of enjoyment, and the frequency of greetings before and after eating was also lower compared to when children ate with adults.3 As for the contents of breakfast, while 97.2% regularly ate a carbohydrate rich staple food, only 63.9% and 38.1% of children respectively ate a protein rich main dish such as fish or meat, and a side dish such as vegetables or seaweed every day. Breakfast contents were classified into five patterns, and the most common pattern was "Pattern 2: Staple food + one main or side dish"(33.9%), followed by the ideal combination of "Pattern 1: Staple food + main dish + side dish"(32.1%), and "Staple food only"(30.8%). Although few children skipped breakfast, these findings indicate the need to improve breakfast contents.4 "Pattern 1: Staple food + main dish + side dish" was more common among children who ate with adults compared to those who ate with other children only, children of parents who liked cooking compared to those of parents who disliked cooking, and among children who did not dislike any vegetables and children whose parents checked the lunch menu of their children's nursery school every day.5 Intake of restaurant food, pre-cooked food, boxed meals, and convenience store food for breakfast was no more than once weekly. Intake of frozen food was slightly more frequent. These findings suggest that factors that positively affect breakfast intake among nursery school children include eating with adults overcoming any dislike of vegetables with the help of adults, and the parents coming to like cooking and developing a greater awareness regarding their children's diet.
