Sensory descriptors of mango ‘Ataulfo’ treated with dose of γ-rad (Cobalt 60) of 0, 0.15, 0.30, and 0.45 kGys were evaluated. Eight trained panelists evaluated eleven sensory descriptors, three on taste, four on texture and four on odor. Judges found significant differences (P < 0.05) for sweetness, sourness, astringency, juiciness, firmness, mango odor and honey odor in at least one treatment. The principal component analysis revealed a positively association between juiciness, mango odor, and honey odor with the irradiation dose of 0.30 kGy, besides the positively association between creaminess and the irradiation dose of 0.15 kGy. Any descriptors were influenced clearly by the radiation with dose at 0.45 kGy. Dose of 0.15 kGy of radiation can be used as phytosanitary treatment without substantially affecting the sensory properties of mango ‘Ataulfo’.

食物網の研究はその重要性が指摘されながらも, いまだに発展途上にある. 食物網の研究を構造面と機能面に分けると, 構造面の研究はいまだパターン記載の段階にある. 一方, 機能面の研究は, 少数例にもかかわらず近年大きな成果を上げつつある. とくに, 陸上生態系においては, クモを含んだシステムでこれまでの群集生態学では見られなかった概念が提出されるなど, 大きな貢献がなされている.

Formation of acetate esters by brewers' yeast during sugar fermentation was investigated in relation to alcohol acetyltransferase activity influenced by the fatty acid composition of the yeast cell membrane. Glucose gave more acetate esters with a higher activity of alcohol acetyltransferase than the other carbohydrates. When maltose was fermented, the activity of alcohol acetyltransferase bound to the cell membrane was suppressed by unsaturated fatty acids accumulated in the cell membrane and the formation of acetate esters was greatly reduced without insufficient fermentation. On the other hand, when fructose was fermented, the ester formation was reduced with a decrease in the enzyme activity and the formation of higher alcohols through insufficient fermentation.

は じ め に 変形性膝関節症(膝OA)に対する治療として,初期には食事療法,運動療法,薬物療法などの保存的治療が行われるが,それでもなお人工膝関節全置換術(TKA)に代表される手術的治療が必要となる症例も多く増加傾向である.近年,慢性疼痛に対する新規薬剤が導入され,その一つであるデュロキセチンの効果も報告されている.また,慢性疼痛を有する膝OAに対するデュロキセチンの有用性も確立されてきている.しかし,TKA周術期におけるデュロキセチンの効果に関する報告は少ない.そこでわれわれは,慢性疼痛を有する膝OA 11例に対しTKA周術期にデュロキセチンを使用し,その術後鎮痛効果を検討したので文献的考察を加え報告する.
