The aim of this study is to shed light on the process whereby home economics education is introduced and established in boys' preparatory schools, and to suggest how improvements can be made in home economics education in these schools. Semi-structured interviews were carried out with ten home economics education teachers at boys' preparatory schools, and the data were analyzed using M-GTA (the modified grounded theory approach). The results are as follows; the departure point of the process of stabilizing home economics education in boys' preparatory school is the reality that the subject is considered "unacceptable". However, through the trial and error process of creating teaching materials and lessons in line with the actual situation of boys' school, and emphasizing the importance of home economics education, changes were noted with respect to students' attitude, cooperation of other teachers, and environment. More specifically, three factors are extracted. They are raising the awareness of pupils who are studying the subject, understanding and cooperation by teachers of other subjects, and improvements in the educational environment. Further, the circular nature of these three elements proved to be an important factor in establishing home economics education. Creating this flow may thus be regarded as enabling home economics education to obtain a sure footing.

The purpose of this study is to clarify the role of male teachers of home economics in the formation of students'gender consciousness. We distributed a questionnaire to a sample survey of 1216 high school students. The results were as follows : 1) Male students who were taught by male teachers liked the subject of home economics. 2) Students who had had experience of male home economics teachers had a lower gender bias in home economics education. 3) Students who were taught by male teachers had greater expectations of becoming a home economics teacher as a future career option.

We formulated the revised edition of “Standard of Nutrition Intake Criteria for Six Food Groups” as a fundamental resource for home economics education in junior high schools. We investigated the appropriate nutrition intake according to each Dietary Reference Intake Criteria to adjust and formulate new reference values applicable to specific age groups. The results indicated an acceptable intake of each nutrient. However, we also formulated measures for improving excessive/ insufficient nutrition intake, including fibers, vitamin B1, saturated fatty acid, magnesium, or iron by substituting one-fourth of rice intake with brown rice, low-fat milk for dairy products, or low-fat red meat for meat products. Further, the concept of approximate food is more easily understood in the revised edition and the particular reference standard is expected to serve effectively in implementing educational guidance for meal selection/menu preparation.

For the realization of coeducational Home Economics, the Association of Promoting Coeducational Home Economics made a positive appeal to the government. The opinions of the government at the time included the content about the gender division of work, content ok(OK) coeducational Home Economics, and the matters concerning coeducational system. Moreover, the basic idea of the Committee of Home Economics Study (1984) was that of coeducation. This was considered as a ratification of convention on the Elimination of All Forms of Discrimination against women. However, the Committee also gave a consideration to those opposed of coeducation.

教育職員免許法上の指定科目と現行の学習指導内容及び教員養成上の必修科目が一致していることは必須であるが,教育職員免許法施行規則に設定されている家庭科に関する専門科目は,教科に求められている時代の要請に比べ,大幅な変革がなされていない。そこで,教育職員免許法施行規則に示された「教科に関する科目」と現行家庭科の学習指導内容の整合性を確認し,問題点の究明と改善の方策を探る際の示唆を得ることを目的に,高等学校教員の現行教育職員免許法施行規則に指定の「家庭」の教科に関する科目に対する意識を調査した結果,以下のことが明らかになった。・高等学校普通科における普通教科「家庭」の履修科目は,「家庭基礎」57%,「家庭総合」14%,であった。専門科目「家庭」の中の科目については「フードデザイン」と「発達と保育」の履修が多かった。・高等学校教諭普通免許状「家庭」の授与に指定されている科目・内容のうち,必要性が高かったのは食領域の「調理実習」「栄養学」「食物学」「食品学」と「保育学」であった。必要性が低かった科目・内容は「家庭電気・機械」「製図」「情報処理」「家庭看護」「家庭経営学」であった。不必要とされる理由に「他の教科で学習したほうがよい」「家庭総合・家庭基礎にない」の回答が多かった。「家庭電気・機械」「製図」「情報処理」は,中学校においては技術科の内容であることを考慮し,削除も含めて今後検討する必要があるのではないかと考える。・教育職員免許状では必要な科目・内容として指定されてはいないが,高等学校で家庭科を指導する上で教員養成上必要と思われる科目・内容に,「消費生活」「福祉」「環境と資源」「高齢社会」の回答が多かった。低かったのは「キャリア教育」,「ジェンダー」,「生活文化」,「少子化問題」であった。

The objective of this study was to examine the paternal role that was conducted in the conversation between father and child at meal-time, and to clarify the educational significance at meals. The results are as follows: 1.Conversation at meals has much educational significance in the training for morality in connecting the child with society. The father has a great influence to socialize his child through their conversation. 2.The modern father cannot play his role sufficiently, because of his inability to have meals with his child.

The purpose of this study is to investigate the significance of coeducational home economics. In order to achieve this purpose, two surveys were carried out, before and after the introduction of coeducational home economics. The first survey was conducted in 1990, and the second in 1998. In both surveys, the same questionnaires were used. The major findings were as follows. 1. Male students who studied home economics accepted diverse family styles, had an intimate attitude towards their family, and had views toward sex roles less influenced by gender. And they participated in household work actively than male students who didn't study home economics. 2. Female students who studied home economics in a coeducational class room accepted diverse family styles, and had views toward sex roles less influenced by gender. 3. Male students who studied home economics in coeducational class room showed higher degree of "readiness for parenthood" than male students who studied home economics in male only class room. By surveys of university students and adults, impressions of home economics have been changing. They who studied coeducational home economics acknowledged studying home economics.

高校生の制服に対する意識をもとに, 今後の被服教育における「着装」の指導の方向性について検討した結果, 以下のような示唆を得た。1.制服校では, 男子は, 「スクール・アイデンティティ(学校らしさ)」や「男らしさ」といった他者から与えられるイメージを, そのまま求め受け入れている傾向があった。また, 女子は「流行」という, 戦略的に創り出すこともできる服装を重視し, 流行にとらわれやすいといった傾向をみることができた。2.自由服校の生徒は, 「自分らしい」着装を心がけていた。これらの生徒の意識をふまえた上で, 自分を表現する手段だけでなく, 自分に合った服装を考えられるような指導が必要である。3.自由服校では, 男子が「高校生らしさ」を否定し異性によく見られようしているのに対し, 女子は「高校生らしさ」を容認し服装における男女差をもっとも嫌っているといったように, 男女がそれぞれ相反する考えをもっていた。4.生徒たちが, 「自分を表現する」ことを学ぶために, 制服の意義や役割を確認するとともに, 「自分らしさ」「高校生らしさ」「男らしさ」「女らしさ」といった服装規範としての概念についてとりあげ, 生徒同士が意見を交わし合うといった授業の工夫ができる。

本研究で,家族対話と家族有用感から家族コミュニケーションを捉え,レジリエンス因子の意欲的活動性と内面共有性との関連性を検討した結果,家族コミュニケーションはレジリエンスに影響し,家族対話や家族有用感が高いとレジリエンスも高いことが明らかになった。また中学生は家族との関係性を評価する家族有用感がキャリア意識の向上に関連すると推察された。中学家庭科の学習指導要領では「これからの自分と家族とのかかわりに関心を持ち,家族関係をよりよくする方法を考える」ことが目標とされているが,この学習をすることは家族と向き合い,対話を深めることにつながり,ひいてはさらに社会と向き合えるレジリエンスを高め,生活者としての自立を育むと考察された。

This study, based on a questionnaire for students who had completed elementary school education, investigated the relation between their level of cooking knowledge and ability of menu planning learned in homemaking education. The result is that the level of students' cooking knowledge are related not to their nutrition assessment but to their favorite assessment.

Experiment was carried out to know the relations between the qualities and quantities of materials in making hamburg-steak and its finished products. Various kinds of samples were made, each weighing 100 grams, varying the quantities of minced beef, onions, eggs and bread crumbs. Four different kinds of beef were used; one of which was bought at the city market, and the other three were the different percentage of fat contents, i.e. the one is no fat, and the others are 20 percent fat, and 40 percent fat respectively. The National Electric Hot Plate (800 W) were used for roasting. The results were as follows : 1. The quantities of onions, eggs, bread crumbs, and fat contents in beef have some relations to the weight of finished products. 2. The quantities of eggs, bread crumbs and collagen in beef are important factors in determining the sizes of finished products. 3. The taste is generally influenced by the quality of beef and the fat used in mixing.

The purpose of this study was to investigate effective teaching methods for problem-solving in home economics of senior high school. For this purpose, home project employing problem-solving with practical reasoning was conducted, and the effectiveness of learning and incidence of employments of learning strategies was evaluated afterward. Our subjects were 220 students in a senior high school. Relationships among learning motives, mastery levels of tasks and learning strategy in the problem-solving were analyzed by the multiple regression analysis. The results were summarized as follows; (1) Before the home project, the cognitive strategies were mainly used, and they were improved among approximately 45% of students by the home project employing problem-solving with practical reasoning. This project improved the metacognitive strategies and the external resource strategies which were used among only 25-35% of students before the home project. (2) Multiple regression analysis suggested that the mastery level of task was elevated by increasing the cognitive motivation of attainment value which was elevated by ascending the metacognitive strategies. Learning strategy was increased by raising incidence of imitating strategies from another students and the mastery level of practice.

This study is based on a questionnaire for pupils who had completed elementary school education to examine the relation between their participation in housework and their ability in planning the menu learned in homemaking classes. The relations were found between their domestic chores and their nutrition assessment, color assessment and combination of chores assessment. And we found that the domestic chores engaged voluntarily by the pupils were related to their menu planning ability.

It is generally said that some difficulty is experienced in removing the shells from hard boiled hen eggs, when the eggs are fresh. Investigations were conducted as to the removability of the shells to know how such shelling differs depending upon conditions such as place of storage, time of storage, size of eggs, and cooling time. As for the eggs used in these experiments, 273 eggs produced on the same day by white leghorns raised in the same environment were collected and about half of them were then stored in the room and the rest in the refrigerator. Experiments were conducted with 5 eggs respectively of large, medium and small size, all having been assorted by weight. The eggs were placed in the saucepan containing a fixed quantity of cold water, which was then heated up to the boiling point, or simmering temperature, of 97℃., and the eggs were thus boiled for 10 minutes. The eggs were then immediately cooled by being kept in contact with a continuous fresh supply of water at 20℃. for five different period of times, i.e., few seconds, 5, 10, 15 and 20 minutes respectively. It was found that the shells were removed most satisfactorily when the eggs had been stored in the room for 4 days or more and in the refrigerator for 8 days or more; and the small eggs better than the large ones; and though there was little difference, if any, resulting from the cooling, the eggs cooled for 15 minutes in running water showed the best result of all.

The purpose of this paper is to explore a further possibility of home economics education through the insights of care ethics. The ethics of care has influenced various fields of study such as philosophy, political theory, economics, pedagogics and so on. Recently the ethic of care attracts much attention not only because it urges a radical reexamination of the premises of human and social sciences and but also because it criticizes neo-liberal assumptions of human beings and society. To clarify social potentiality of home economics education in the age of mixture of neo-liberalism and neoconservatism, the article reviews first the assumption of "independence" in the discipline of western political philosophy. The ethics of care was discovered through criticizing the male-oriented idea of “independence” in the tradition of western philosophy. Whereas traditional political philosophy has idealized independent male citizens, women has been degraded as the second citizen mainly because they are forced to care for the dependent, such as children, the disabled, the infirm and the aged. To reexamine the history of devaluation of female care wo leads us not only to reevaluate the social meaning of care work but also to criticize the idea of “independent”citizens itself. It is a significant issue how to situate home economics education in a wider political context to explore its potentiality.

Several industrial arts and home economics textbooks in junior high school have been analyzed as to text, illustrations, photos and charts. Their expressions have been discussed with gender perspectives. Only home economics area has been analyzed and it was divided into 5 sections home life, nutrition, clothing, housing and nursing. Each section was divided into subgroups ; cover, back cover, frontispiece and so on. Summary of the results is shown as follows, 1. There are little expressions in the text that are recognized to be gender biased. 2. Illustration and photos have gender biased ones regarding roles for each gender, particularly in home life area. Gender biased expressions were also observed in covers and frontispieces, in terms of colors. 3. It seemed characteristic that some photos have gender biased expressions that are typically seen in society.
