Based on the broad-spectrum antiviral effect of green tea catechins, we established an experimental skin contact model for influenza virus transmission and evaluated the use of a green tea solution as a first-hand disinfectant. The infectivity of the virus on the skin cell layer became obsolete when washed with the green tea solution. The skin contact model could be applied to develop non-pharmaceutical intervention measures for reducing human transmission of the influenza virus.

A Bacillus subtilis plasmid encoding a green fluorescence protein gene (gfp) was constructed. The fluorescence of B. subtilis colonies having this plasmid on agar plates was so high that they could be readily discerned visually under UV light. The fluorescence could be effectively expressed in three ways (i) through use of a strong bsr promoter (blasticidin S resistance gene), (ii) by efficient translation with the bsr translation system, and (iii) through increase in the copy number per cell. The high stability of the GFP plasmid was demonstrated by using more complicated growth conditions without any antibiotic for selection.

The water-soluble fraction of kale (Brassica oleracea L. var. acephala DC.) had immunoglobulin (Ig) production stimulating activity in human hybridoma HB4C5 cells and human peripheral blood lymphocytes. The biochemical and physical properties of the main active substance in kale were found to be a heat-stable protein with a molecular weight higher than 50 kDa. The Ig production-stimulating factors were assumed to act on the translational and/or secreting processes of Igs. This Ig production-stimulating effect was also observed in lymphocytes from the mesenteric lymph node and Peyer’s patches of mice that had been administered with the kale extract for 14 d. The partially purified kale extract was analyzed by LC-ESI-MS/MS, the result indicating ribulose-1,5-bisphosphate carboxylase/oxygenase (rubisco) as an active substance. Rubisco from spinach indeed exhibited Ig production-stimulating activity in HB4C5 cells. These findings provide another beneficial aspect of kale as a health-promoting foodstuff.

核酸関連化合物のうち,プリン・ピリミジン塩基類,ヌクレオシド類, 2'-及び3'-モノヌクレオチド類ポリヌクレオチド類には単独ではほとんどうま味がないが, 6-ヒドロキシプリン誘導体の5'-モノヌクレオチド類には独特の呈味作用があり,これら呈味ヌクレオチド類とL-グルタミン酸ナトリウムの間に味に関し顕著な特異的相乗作用がみとめられた.

高農めぐりをして気の付いたことだが,高農での教育・研究に一生を捧げ,現在もなおカクシャクとして当時のお弟子さん方の尊敬を受けておられる,いわばその高農の歴史を一身で示しておられる先生方が多い.今日座談会の中心となって下さった高橋悌蔵先生もまさに岐阜高農そのものと申し上げてもおかしくない.90歳を越えられても記憶力も抜群で,よどみな答えられるのにはただ恐れ入るばかり,すでに岐阜大を退官されておられる,高農卒業生としては大先輩格の小菅・松原の両先生も,恩師の高橋先生から「あんたたちも皆ったんでしょ」などといわては,ひたすら「ハイ,ハイ」.誌面では伝えにくい,師弟のなこやかな交歓のなかに話題がはずみました.座談会の準備・進行に蔭の主役としてご助力をいただいた永田幸雄先生,農場や実習工場をご案内くださった上野良光先生にも心から御礼申し上げます.

The water sorption kinetics of dried pasta were measured in the 20–90 °C range in 1.83 mol/L of NaCl and at 80 °C in 1.83 mol/L of LiCl, KCl, NaBr and NaI solutions in order to elucidate the role of salt in the kinetics. At the temperatures higher than 70.8 °C, the change in the enthalpy of sorption, ΔH, in the 1.83 mol/L NaCl solution was 33.1 kJ/mol, which was greater than the ΔH value in water, and the activation energy for the sorption, E, in the salt solution was 25.6 kJ/mol, which was slightly lower than the E value in water. The Hofmeister series of ions was an index for their effect on the equilibrium amount of the sorbed solution of pasta. The apparent diffusion coefficient of water into pasta was not correlated with the crystal radius of the salts, but was with the Stokes radius of the hydrated ions. Equations were formulated to predict the amount of sorbed solution under any condition of temperature and NaCl concentration.

(1) 茶葉を窒素ガスや炭酸ガスのなかに入れ,嫌気的条件に置いたところ, γ-アミノ酪酸とアラニンが増加しグルタミン酸とアスパラギン酸が減少した.一方,テアニンやカフェイン,タンニン含量は変動しなかった.<br> (2) γ-アミノ酪酸は血圧降下作用を示す成分であるといわれることから,窒素ガス処理を行った茶葉で緑茶を製造した.その結果,一番茶,二番茶,三番茶ともにγ-アミノ酪酸含量が150mg/100g以上になった.<br> (3) ウーロン茶,紅茶のγ-アミノ酪酸含量は,茶葉を萎凋する前に窒素ガス処理するより,萎凋後に窒素ガス処理するほうが高くなった.<br> (4) 窒素ガス処理した茶葉から製造した茶は独特な香りを持っていたので, GC-MSで香気成分を分析,同定したところ,窒素ガス処理しないで製造した茶に比べて,脂肪酸のメチルやエチルエステルが増加していた.しかし,これらの成分の臭いは窒素ガス処理した茶が持つ香りとは,異なっていた.

銅クロロフィリンナトリウム(SCC)より消臭力が優れていて,口腔に利用できる消臭剤を探索するためにメチルメルカプタンを用いた消臭力試験法を設定し,生薬,スパイス等植物のメタノール抽出物の効果を測定した.その結果次の点が明らかになった.<br> (1)消臭作用を示した植物(消臭率60%以上のもの)は65科167種中23科40種,このうちシソ科に属する植物14種はすべてが有効であった.<br> (2) SCC程度以上の消臭力を示したものは6種あり,そのうちスナウ,ホオノキ,クコは過去に消臭作用をもつ植物として発表されたことはない.またセージ,ローズマリー,タイムはその精油に魚臭抑制作用があることが知られているが,本研究では非精油画分にメチルメルカプタン捕捉作用が認められ,新規の消臭成分め存在が示唆された.

The <I>Saccharomyces cerevisiae</I> gene <I>GTS1</I> is pleiotropic. <I>GTS1</I> induction produces a variety of biological phenomena represented by heat tolerance. To clarify the interaction partners of Gts1p, tandem affinity purification and immunoprecipitation were performed. Ssa1p and Ssa2p, members of the 70-kDa heat-shock protein family, were identified. Co-expression of <I>SSA1</I> or <I>SSA2</I> inhibited Gts1p nuclear import. As compared to the wild type, the <I>SSA1</I> and <I>SSA2</I> double-deletion mutant showed enhancement of Gts1p-mediated heat tolerance in the stationary phase, although neither of the single deletions affected heat tolerance, irrespective of <I>GTS1</I> induction. These results indicate that the heat tolerance function of Gts1p is regulated by Ssa1p and Ssa2p. Furthermore, time-dependent production of Ssa1p and Ssa2p revealed that Gts1p controls the production of Ssa1p and Ssa2p, and that the total amounts of Ssa1p and Ssa2p are important in inhibiting the unique function of Gts1p.

Two new pyrrolizidine alkaloids, ideamines A and B, together with other analogs (lycopsamine and parsonsine) were isolated in the N-oxide forms from adult bodies of the Apocynaceae-feeding danaine butterfly, Idea leuconoe. Ideamine A was characterized as a homolog of lycopsamine, in which the viridifloric acid moiety was replaced by a 2-ethyl-2, 3-dihydroxybutanoic moiety. Likewise, ideamine B was identified as a nor-derivative of parsonsine, in which the trachelanthic acid moiety was replaced by a 2-ethyl-2, 3-dihydroxybutanoic moiety diastereomeric to the necic acid from ideamine A.

The effects of dietary Yamabushitake mushroom (Hericium erinaceus) on lipid metabolism were examined. C57BL/6J mice were fed a high-fat diet containing hot-water extract (HW-E) and an ethanol extract (EtOH-E) of Yamabushitake mushroom. Administration of HW-E or EtOH-E with a high-fat diet for 28 d resulted in a significant decrease in body weight gain, fat weight, and serum and hepatic triacylglycerol levels. Our in vitro experiments indicated that EtOH-E acts as an agonist of peroxisome proliferator-activated receptor α (PPARα). Quantitative analyses of hepatic mRNA levels revealed that EtOH-E administration resulted in up-regulation of mRNA for a number of PPARα-regulating genes in spite of the fact that the gene expression of PPARα did not change. These results suggest that EtOH-E improves lipid metabolism in mice fed a high-fat diet, and that these effects were mediated by modulation of lipid metabolic gene expression, at least in part via activation of PPARα.

青草飼料を与えた乳牛の尿より活性炭を吸着剤に用いてC<sub>10</sub>H<sub>10</sub>O<sub>2</sub>の化学組成を有する化合物を結晶状に単離した.酸素1原子はエノール姓水酸基の形で存在している事を認め,又同時に活性炭に吸着されて来るものの中より特有な牛尿臭を有する褐色油を得た.この油を減圧蒸溜した物の中より<i>p</i>-cresol及びphenolをaryloxy醋酸の形で分離確認した.<br> 終に元素分析は薬理研究所大畑氏に,吸収スペクトルの測定は北海道水産物検査所の小泉氏にお願いした事を附記し,御指導を賜つた北大小幡教授,東大石館教授と共に深甚なる謝意を表する.
